Abstract
Effective food safety management is essential for protecting consumers from foodborne disease and other harms associated with food consumption. However, poor food-handling practices in food service establishments remain a major contributor to the incidence and impact of foodborne disease. As an effective management intervention, education and training are often implemented to improve food safety practices in food service establishments, and their effectiveness is subsequently verified. This chapter describes two methods that can be used individually, or together, to assess the level of understanding, adoption, and efficacy of food safety practices in food service establishments: (1) a self-reported questionnaire and (2) an observation checklist. The benefits and limitations of these methods, along with associated management strategies to improve their efficacy, are discussed.
